Wow!  This summer is flying by.  I have been super busy with work and vacation I haven’t had time to update the blog with a recipe.  It’s been almost a month and I am sorry.

This time of year gives me some of my favourite things!  My garden is bursting with veggies and my herbs are everywhere.  This gives me the opportunity to make one of my favourite dishes: spaghetti with fresh tomatoes and basil.  This is a light and simple dinner that is only 215 calories per serving, only 6 grams of fat and is delicious.

 

8 plum tomatoes, chopped

4 teaspoons extra-virgin olive oil

1 garlic clove, bruised (place your knife flat on top of the garlic clove and whack it so that the garlic is a bit smooshed but ideally, still in one piece.)

1/4 teaspoon salt

freshly ground pepper

6 ounces spaghetti, whole wheat

1/2 cup minced basil

1.  Combine the tomatoes, oil, garlic, salt, and pepper in a serving blowl.

2.  Cook the spaghetti according to package directions.  When it is almost done, remove the garlic from the tomato mixture and discard.  Drain the spaghetti mixture; toss gently to coat.  Sprinkle with the basil.
