A little maple syrup or some fresh fruit make this a satisfying treat. Be sure to use a sturdy bread – one that’s not too crumbly. Otherwise the slices might fall apart when you dip the bread into the egg mixture. My daughter asks for this every Sunday morning.
2 large eggs
1/2 cup fat-free milk
2 teaspoons confectioners’ sugar
1/2 teaspoon vanilla extract
1/4 teaspoon cinnamon
4 thick slices firm whole-wheat bread
1 tablespoon unsalted butter, cut into small pieces
1. Preheat the oven to 425*F. Spray a baking sheet with nonstick spray.
2. Lightly beat the eggs with a fork in a shallow bowl. Whisk in the milk, sugar, vanilla, and cinnamon.
3. Soak the bread in the egg mixture, then transfer to the baking sheet. Sprinkle with the butter, then bake until golden, 8-10 minutes.
Garnish with either syrup or fresh fruit.
