I know that it’s Tuesday and I do apologize for putting this up a day late. So…it’s Monday’s Recipe, on a Tuesday.
I love Carrot Cake. I love making it. I love the way it smells when it bakes. I especially love how it tastes. Here is a low-calorie recipe for you to try at home. It’s about 175 calories per 12 servings. You can also make these into convenient cupcakes.
2 tablespoons apple butter
1 cup of unsweetened apple sauce
3/4 cups of eggs
1/2 cup of Splenda
1/2 cup of brown sugar
2 teaspoons vanilla
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
3 teaspoons cinnamon
3 cups of grated carrots
1. Preheat oven to 350*
2. Coat a baking pan with non-fat cooking spray,
3. In a mixing bowl, combine the apple bitter, applesauce, eggs, sugar and vanilla until smooth.
4. Next, slowly add flour, baking soda, baking powder and cinnamon to the mixture.
5. Blend until all of the ingredients are moistened.
6. Lightly mix in the grated carrots.
7. Pour into baking pan.
8. Bake in oven for 35-40 minutes.
9. After your cake is done baking, allow it to reach room temperature and sprinkle powdered sugar on top. Another option is to use fat-free Cool Whip as a topping.
