Tahini, the past made from ground sesame seeds, is an ingredient in hummus and other Middle Eastern dishes. If you don’t have any on hand creamy peanut butter is a terrific stand-in.
1/2 cup canned chickpeas, rinsed and drained
1 tbsp plain nonfat yogurt
1 tsp fresh lemon juice
1 tsp tahini or creamy peanut butter
1/4 tsp garlic salt
1/8 tsp ground cumin
1 drop hot red pepper sauce, or to taste
1 (6-inch) pita, split
1 cucumber, thinly sliced
1 plum tomato, thinly sliced
1. To make the hummus, puree the chickpeas, yogurt, lemon juice, tahini, garlic salt, cumin, and pepper sauce in a food processor.
2. Heat the pita according to package directions. Divide the hummus between the pita halves, then top with the cucumber and tomato.
This yummy sandwich is only 207 calories and 5 grams of fat.
