These baked beans make a great addition to any pot-luck supper or a side dish to your dinner. Substituting hickory-flavoured liquid smoke for bacon cuts down on the fat and makes this tasty recipe only 71 calories per serving.
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1 small onion, chopped
1 (8-ounce) jar tomato sauce
2 (15-ounce) cans pinto beans, rinsed and drained
1/4 cup salsa
2 tablespoons Dijon mustard
1 tablespoon hickory-flavoured liquid smoke
Spray a nonstick skillet with nonstick spray and set over medium-high heat. Add the peppers and onion and sauté until tender.
Stir in the tomato sauce, beans, salsa, mustard and liquid smoke. Reduce the heat and cook, stirring occasionally, until thickened, about 15 minutes.
